Buffalo Chicken Recipe

Makes one serving (one protein, one Melba toast)


One serving size of chicken cut into long thin strips

Melba toast crushed (1-2 round toast)

2 Tbsp. hot sauce (Franks red hot sauce preferably)

4 Tbsp. lemon juice

Pinch of Salt and black pepper


Marinate chicken strips in lemon juice and salt.  Coat chicken strips with

Melba crumbs.  Fry in frying pan until lightly browned and cooked thoroughly.  Toss with hot sauce and black pepper to taste.  Serve as finger food or as an entrée.
