Cilantro Chicken Recipe

Makes one serving (one protein, one vegetable)


One serving size of chicken (cubed or diced)

Chopped tomatoes

Half cup of chicken broth or water

2 Tbsp. lemon juice

Fresh chopped cilantro

1 Tbsp. chopped onion

Quarter tsp. dried oregano

Quarter clove fresh garlic minced

Quarter tsp. chili powder

Cayenne for taste

Pinch of cumin

Pinch of Salt and pepper


Lightly brown the chicken with a little lemon juice.  Add spices, additional lemon juice, and chicken broth. When the chicken is cooked thoroughly, add fresh tomatoes and cilantro and cook for 5-10 more minutes.
